POMELO & MANGO SALAD - inspired by @melindasoon I LOVE pomelo so when Melinda posted up her pomelo salad recipe, I knew I wanted to try it. I just used the ingredients that I had so here’s what ended up in my dressing: DRESSING ingredients ~ chili flakes ~ grated young ginger ~ Masarang Arenga Forest Sugar by @straitswholefoods ~ Lemon juice ~ @mu.soysauce (the Gula Melaka edition) ~ @mu.soysauce organic tauchu SOOOO yummyyyyyy! VEGAN “TUNA” NIGIRI - made from Roma tomatoes! 🍅🍅🍅 I got some lovely Roma tomatoes from @bensindependentgrocer and I asked on Facebook what you would do with it. Michelle Eng suggested vegan tuna and I thought that was a great idea! Thanks Allison for the leftover sushi rice - this was perfect for the nigiri. Since I’ve learnt how to make the perfect sushi rice from Akiko on @bentoyacooking via @veecoco_academy, I used that recipe for making the rice. I used the nigiri sushi mould I got from Daiso to get the uniform rice shapes - not afraid to admit I’m happy with using such gadgets. The vegan tuna recipe was based on @rootyfruityvegan’s version. Crissie has the full recipe on her website and she even has a video on her YouTube channel on how to make it so you can check out the method there. Search for “Vegan Tomato Tuna Sashimi”🍣 Here’s what I used: INGREDIENTS ✔️Roma tomatoes @Mu.soysauce (the Naked one) ✔️rice vinegar - thanks Allison Plant! ✔️Masarang arenga forest sugar syrup ✔️ground ginger ✔️Nori flakes - I tore up ¼ quarter nori sheet and blitzed them in my Nutribullet to get the flakes The only thing I didn’t use from the original recipe is the garlic powder as I try to cut down on garlic whenever I can. Topped it with some beet microgreens from @greenpatchmalaysia.🌱 It didn’t really taste like raw tuna to me but I really enjoyed this for lunch. Maybe I should just call it tomato nigiri.
