Baked Spinach Artichoke Wonton Cups Ingredients: 24 chilled wonton wrappers 9 oz creamed spinach (frozen or freshly made) 3-6 oz marinated artichoke hearts, chopped (approx. 1/4-1/2 cup) 2 oz softened cream cheese, cut into 6-8 cubes 1/2 cup freshly grated parmesan cheese 1/2 cup grated mozzarella cheese 1/2 tsp garlic powder 1/4-1/2 tsp crushed red pepper flakes 1/8 tsp salt, or to taste 1/8 tsp black pepper Spray oil (avocado, olive, etc.) Directions: Preheat the oven: Set the oven to 365°F (185°C). Prepare the spinach and artichokes: Warm the creamed spinach according to package instructions. Drain the marinated artichokes and chop them into small pieces. Mix the artichokes with the warmed spinach. Prep the wonton cups: Lightly spray a mini-muffin tray with oil. Gently place a wonton wrapper into each cup. For extra crunch, you can also lightly spray the wonton wrappers themselves. Bake for 5 minutes to lightly crisp the wonton cups. Make the filling: In a mixing bowl, combine the creamed spinach, cream cheese, parmesan, mozzarella, garlic powder, red pepper flakes, salt, and black pepper. Stir until well mixed. Fill and bake: Spoon the spinach and cheese mixture into the pre-baked wonton cups. Return the tray to the oven and bake for an additional 5 minutes, or until the cheese is melted and the edges of the wonton cups are golden brown and crispy.
