The fact that they spent a week living off of lettuce and are fine seriously bothers me.

That's just not possible given how they are and the things they do going forward. Like, macros and micros aside, a head of lettuce is 50-60ish calories. For the standard 2,000 calories a day, they'd have to eat 40+ lettuces a day, each, to even meet their calorie needs. There’s no way 1,400+* lettuces went missing and no one noticed. And no way they'd be strong enough to do everything else afterwards.
