this post has been banging about inside of my head ever since I made one comment about rapidash being cart horses, so uhhhh here’s a quick headcanon dump relating to galarian pokemon and their jobs!
Galarian Rapidash are undeniably beautiful pokemon, and it was this aesthetic appeal that made them the number one choice for carriage-pulling. In the past they were used as status symbols, with only the upper classes being able to afford a horse and carriage of their own, though now they can be rented for a reasonable price. Since the rise of Corviknight cabbies made carriage travel obsolete, Rapidash are now mainly used to pull wedding carriages or make for a flashy prom arrival.
I’m pretty sure this was already stated in Sun and Moon, but Mudsdale are the heavy working horses. They can pull ploughs, heavy carts, and even pull cars out of wherever they’ve managed to get stuck. Their high stamina means that only a few Mudsdale are needed to complete a week or more of continuous work, simply cycling one out whenever they get tired, and they’re a lot cheaper to buy than a Rapidash. 
Grapploct, Copperajah, Machamp and Hippowdon are all invaluable around demolition sites. Their incredible strength means that they can topple a building and remove all of the debris faster than it would take a team of people to do so, and they remain unbothered by the noise, dust, and general controlled chaos of demolition. They also help move materials to and fro, making them a pretty common sight across most building sites in Galar.
A lot of fighting pokemon help out in martial arts and general self defense classes. This is probably pretty obvious, given that a lot of them have a martial arts theme to their design, but it’s still worth mentioning. Exactly what pokemon you’ll see depends on what type of class you’re taking, but Tyrogue is a pretty universal appearance. Falinks is also there, but he’s more of a Moral Support Friend.
Growlithe, Yamper, Lillipup and Rockruff are almost always put in a sheepdog position. Their easygoing, friendly temperaments mean that they need very little training when it comes to getting used to all of the various farmhands, and their high intelligence makes teaching commands a very easy task. For bigger farms, they might even have all four species working on the same land, though most tend to stick to one pokemon line.
If it’s decided that someone would benefit from having an emotional support pokemon, the most common ones offered are Eevee, Cutiefly, Happiny, Ralts, Togepi and Cleffa. They’re all pretty small, so the individual won’t have to worry about losing control of them, and they’ve been specifically bred to have the gentlest temperaments. No matter whether the person is a child or adult, complete novice Trainer or total expert, they’ll likely be given one of the above.
Whenever schools wish to give their students some practical education about pokemon, they hire a small selection to be brought into the classroom. This saves having to run the risk of getting attacked by a wild one, and the students can see types that might not be native to their local area. Usually, the pokemon brought are Wooloo, Caterpie, Magikarp, Pikachu, Eevee and it’s eeveelutions, and Darumaka (both variants).
When a restaurant has a lot of food left over at the end of the day that they can’t resell, it’s given to pokemon rather than let it go to waste. They gather in hordes outside of the surrounding alleyways and at the back of the establishment, and are sometimes even caught by the restaurant staff. The most common visitors are Greedent, the Galarian Zigzagoon line, Munchlax, Wimpod, Trubbish, and Snom. If there’s any leftover deserts, they end up attracting Swirlix and Combee too.
Pidove and Pelipper are the mail carriers. I will never compromise on this.
The backup dancers of the pokemon world are Mr. Rime, Bellossom, Roserade, Maractus, Steenee and Ludicolo. The choice of pokemon will depend both on the performer and the type of music used in the performance, and naturally there’s more musically-inclined pokemon than just the above six, but they are the most commonly seen. Until Galar allows in Oricorio and the darling yellow cheerleading bird, the above pokemon will be the ones heading any major musical event at the Gym Challenge opening/closing ceremonies.
Wailord and Corviknight are used to carry international cargo. The reliance on pokemon, rather than manmade planes or ships, ensures that even in an emergency they should have a way to continue their imports/exports and avoid any sort of shortage.
And finally, let’s end this on a seasonal one! Much like how we have black cats and spiders to represent Halloween, Galar utilises its many native Dark and Ghost types. Nickit, Purrloin, Grimmsnarl, Hatterene, Cofagrigus, Runerigus, and ever iconic Gengar feature on most decorations. Most types get some sort of honourable mention, and you can find at least one costume of just about every pokemon ever discovered, but the overall theme of the decor is very Dark/Ghost centric.

OK, if we’re really gonna do this let’s do it right.
BIIIIG Pokémon AU dump below the cut!
In the Etheria region, Adora was an orphan who got taken in and raised by Team Horde. One day on a pokémon-gathering mission, she got separated from her bff Catra and found a Honedge in the forest. Those were pretty rare, so she tried to catch it, but it fled. She chased it all the way out of the forest and onto the nearest route, where she encountered Glimmer and Bow. They were friendly, about her age, and eagerly challenged her to a battle. She wasn't supposed to interact with people outside the team... but the Honedge had stopped next to them, as if it had led her there on purpose. Curiosity got the better of her and she battled them with the Honedge, and it felt like the most natural thing in the world. Then there was a commotion - a bunch of people just had their pokémon stolen! The three find that it's Team Horde who did it. They battle to get the stolen pokémon back, Adora's worldview changes in an afternoon, and so on and so forth. Then they adventure to become stronger trainers and take down Team Horde.
(With the exeption of companion pokémon, all pokémon in the teams below are shown in the form they would be in when they first appear in the story, which is often their least evolved form).
Adora
Companion Pokémon: Aegislash

Adora is the main character and catches all sorts of pokémon, but she's mostly seen with her loyal Honedge, which later evolves into Doublade and then Aegislash. The Honedge was carrying a mysterious blue stone when she met it. When it reaches its final evolution, she discovers that the stone allows it to transform into a powerful Mega Evolution that has never been seen before. The stone doesn’t work on any other Aegislash - only hers, and only when she’s nearby. After befriending Bow and Glimmer, they take her to the nearest pokémon lab, where she is allowed to choose a second pokémon to help on her quest. She chooses a Charmander (because she heard you can ride Charizards in the air, and that’s super cool).

Glimmer
Companion Pokémon: Musharna

Glimmer is Adora's "rival," as they say in the games. She’s the daughter of a famous gym leader and one day plans to become the leader of the Bright Moon gym herself. She favors fairy and psychic type pokémon. Her companion pokémon, Musharna, was inherited from her father Micah. Micah was a champion who used mainly psychic types, but he went missing years ago, leaving his family and favorite pokémon behind at home.

Bow
Companion Pokémon: Rowlet

Bow is Glimmer's best friend and Adora's other "rival." His fathers and twelve older siblings are all pokémon researchers. He’s the first in his family to become a pokémon trainer. He favors flying and normal types. As an archery enthusiast, his many bird pokémon help retrieve his arrows.

Angella
Companion Pokémon: Cresselia

Angella is the leader of Bright Moon gym, a fairy-type gym which offers the Moonstone badge for defeating the leader. She favors fairy, flying, and psychic types. She's the first gym leader the trio has to defeat on their journey (to convince her to let Glimmer go travelling without supervision). Her signature pokémon is Cresselia, a pokémon that hasn't been seen anywhere else. She doesn't use it in battle except in dire emergencies. The story of how she befriended it is the stuff of legends.

Perfuma
Companion Pokémon: Comfey

Perfuma uses mainly grass types. She’s the leader of Plumeria gym, a peaceful grass-type gym on the edge of the forest. She and all the trainers there spend as much time bonding with their pokémon as battling them. Plumeria offers the Heart Blossom badge as a reward. Most of Perfuma’s pokémon are cute, but her ruthless Carnivine catches unprepared trainers off guard.

Sea Hawk
Companion Pokémon: Talonflame (and Swift Wind the Rapidash)

Sea Hawk is a gym leader too, though he’s not as famous as the others. He favors fire and water types. His gym is... technically a ferry, and the challengers are technically passengers to the island where Salineas gym lies. Bah, details! It’s called the Seaworthy gym (even though it’s supposedly a fire-type gym…) and offers the Adventure badge. Even though it’s not as well-known as the other Etherian gyms (or perhaps because of it), he tends to catch challengers off guard with his opposing types and his surprisingly powerful pokémon.
Swift Wind is a Rapidash who has way too much personality and refuses to go inside a pokéball. Adora bonds with him when they meet at Seaworthy gym, and so Sea Hawk allows her to take him on her journey. The trio takes turns riding him. He can even carry all three of them for short distances.

Mermista
Companion Pokémon: Gyarados

Mermista runs Salineas, a water-type gym, but she also likes dark-type pokémon. Her gym offers the Pearl badge as a reward for defeating the gym leader. Trainers have to take a ferry to get to the island where her gym lies. People think it’s to make trainers work extra hard for their badge, but really Mermista just like the extra distance so she isn’t disturbed as often.

Spinnerella
Companion Pokémon: Steelix

Spinnerella runs the Windy gym. It’s a flying-type gym that gives the Cyclone badge to winning challengers. Trainers need to be careful where they stand in this gym, or else they’ll get blown off their feet! She and Netossa are married; they became engaged when they traded their most favored pokémon to each other, knowing they would be in the best hands. Steelix was Netossa’s toughest pokémon, but Spinnerella treats it as gently as her own child.

Netossa
Companion Pokémon: Spinda

Netossa is the leader of the steel-type Lattice gym, which offers the Cable badge. The gym is booby-trapped with net launchers, forcing challengers to think on their feet! She and Spinnerella are married; they became engaged when they traded their most favored pokémon to each other. Spinda was Spinnerella’s first ever pokémon, and Netossa treasures it with her whole heart.

Frosta
Companion Pokémon: Abomasnow

Frosta is a gym leader who favors ice and fighting types. She defeated the former gym leaders, her parents, at a young age, proving that she was ready to take over the ice-type Snows gym. Her gym offers the Fractal badge when you defeat her.

Entrapta
Companion Pokémon: Rotom

Entrapta is the leader of the electric-type Dryl gym, which is full of trap doors and robotic tricks. It offers the Circuit badge. Entrapta uses her winnings from losing challengers to fund her tech research. She favors electric and steel-type pokémon. Team Horde later recruits her by offering her nigh-unlimited funding for her experiments.

As Adora and her friends defeat the gym leaders one by one, they agree to help battle against Team Horde. But Team Horde has formidable trainers of their own!
Catra
Companion Pokémon: Persian

Catra was Adora’s best friend in Team Horde. It would be fair to say Adora was Catra’s only friend. When Adora left, it scarred Catra emotionally. Now she fights for Team Horde with everything she has, trying to prove herself… even if she doesn’t exactly agree with the leadership. Catra starts as a Grunt in Team Horde, but her title changes over time as she climbs the ranks through strength and sheer tenacity. She uses mostly normal types, as they have few weaknesses. She was assigned many feline pokémon by Team Horde, but she branches out more once she has the freedom to do so.

Hordak
Companion Pokémon: Imp

Lord Hordak is the leader of Team Horde. He wears a mask that conceals his identity and origins. He doesn’t battle on his own unless given no other option; his main strength is in tech development for Team Horde. When he does fight, though, his pokémon don’t look like any known pokémon at all. They’re... not right, like they've been bred in a lab under strange conditions. Their types are unknown. Hordak doesn't form attachments to his pokémon... except his non-battling companion Imp, which seems to be some sort of mutant Impidimp that can fly and imitate sounds it hears.

Shadow Weaver
Companion Pokémon: Mismagius

Shadow Weaver is the mysterious second-in-command in Team Horde. She serves Lord Hordak in her quest for power, and she personally trains many of the Grunts. She uses mostly ghost types. Some say she used to be a highly respected psychic-type trainer… but those are only rumors.

Scorpia
Companion Pokémon: Skorupi

Scorpia was raised by Team Horde like Adora. She uses mainly bug types but branches into electric later on. She's loyal to Team Horde (and Catra) at first, but after the trio defeats her and convinces her to leave, she takes up the mantle of gym leader in her family's old electric-type gym.

Huntara
Companion Pokémon: Tyranitar

In the desert area of the Etheria region, called the Crimson Waste, all disputes are settled with pokémon battles. Might makes right. Everyone there is pretty much aligned with one of two gangs: Tung Lashor's, or Huntara's. The leader of the ground-type gym there is Huntara. She uses ground and rock types. She used to work for Team Horde before having a change of heart and leaving her old life behind.

Double Trouble
Companion Pokémon: Salazzle

Double Trouble lives in the Crimson Waste as well, but they're not aligned with a gang. They gather information for whoever has the money, up to and including Team Horde. They don't use their pokémon for battling so much as intel gathering. They don't have a favorite type, unless that type is "deceptive." Each of their pokémon has a specific role. The Zoroark and Ditto can disguise themselves, Chatot mimics sounds and speech, Thievul is the stealth unit, and Rotom is useful for info gathering with its ability to enter machines. The only pokémon they use strictly for battling is Salazzle, and they chose it because aesthetic they find it to be a kindred spirit of sorts.

First SHINY was a Pidove,which I gave to my cousin as a present,I was 10 and it was on of the first pokèmon I've ever encountered
First official shiny,though,was shiny Roselia,found by horde hunting on ORAS

Mine was technically a Whismur, but we don’t speak of that time, my first official shiny was a Stunfisk in X, I named him Thunder and I love him very much
