Vegan Napolitan (Japanese Ketchup Spaghetti)

Napolitan(ナポリタン) is Japanese style spaghetti, that should be kept secret from Italians because most of its sauce is made of tomato ketchup. The taste of this dish depends totally on taste of ketchup, so it's very easy to cook, hardly to fail.

After all, it will taste like ketchup, and I like it.

Just spent my night tumbling head first down another Japan nostalgia trip homesick rabbit hole. It all started when I was bored at work, scrolling through Facebook, when I happen to stumble upon the above Japan Today article. I wasn't even totally sure what food it was referring too until I clicked the article and it felt like 1,000 forgotten memories were hitting my face like a truck all at once.

Napolitan.

My first experience with Napolitan was buying the sauce at my local inaka grocery store by accident thinking it was just regular pasta sauce and being unpleasantly surprised when it tasted sweet.

But at some point along the way, I started to actually like Napolitan. I don't think I often craved it in particular, but every so often I found myself choosing it when presented with the option at a cafe or conbini. It was my go-to food at one place in particular.

Whenever I found myself hungry or tired around Nagoya station there were very few options. Everywhere I tried always seemed either too expensive or too busy to sit down. Until, one day, I discovered a new cafe within the big Yamada Denki electronics store that, for whatever reason, was miraculously empty. And thus, that became my place to take a break before after playing PriPara/PriChan in the same store or maybe in between King of Prism showings at the theater across the way. It felt like my little secret. And, whenever I was there, what I always remember ordering was Napolitan.

And that was how I found myself suddenly heavily craving this objectivly terrible ketchup spaghetti despite having zero thought or care of in YEARS. And due to it's unpopularity anywhere but Japan, I quickly realized that, despite limited skills, the only way I was going to fix this problem would be to make it myself.

And I actually did.

And it came out pretty OK. Not cafe quality but still, I am contently full of Napolitan as I type this.

I swear I just... I miss the strangest damn things sometimes. (I think I mentioned this briefly before but within months of returning I cried over the Yamada Denki theme song itself...... I only ever went there due to it's convenient proximity to Nagoya station, and yet...)

While typing I also checked to see if that cafe was still there, and what do you know, it is. Cafe Resto. And there's even a photo of Napolitan on the menu haha.
