National Indian Pudding Day

The name #IndianPudding does not refer to the native Americans. In fact it is used to identify the main ingredient, which is cornmeal, since it was once called Indian meal.

Indian pudding is a traditional New England dessert.

In the 17th century, English colonists brought hasty pudding to North America, transforming it. Although they initially made the pudding with wheat, due to a shortage of grain, the colonists eventually used cornmeal. Since the colonists had learned to cultivate maize (corn) from the indigenous peoples, the crop was readily available. The colonists derived the name for Indian pudding from their name for cornmeal - Indian meal. They also replaced the water with milk. For added flavor, cooks add either molasses or maple syrup. Other ingredients they added include cinnamon, ground ginger, butter, eggs, raisins, and nuts.

I end up feeling there is still so much more to explore. Mutta Mala is one of those rare Indian desserts made with egg. This is a classic #Malabar dessert that reminded me of floating islands or French Ile Flottante. Created by Chef @shri_bala at the recent Deccan Delights festival at #Kanak at #Trident, this could well be India’s answer to well plated desserts of the west. We have the tastiest halwas and sweets, but come to think of it, they lose out on the presentation as most look like a goey mass. . . While this delicate concoction of a fluffy egg white soufflé type of base with the yolks made into thin strips or flat noodles on top. Together they make a sensational combination and look beautiful. Have any of you heard of Indian Pudding? Apparently it’s an east coast thing and when I read about it I was curious so...I had to make it. It’s milk, cornmeal, butter, brown sugar, molasses, cinnamon, ginger, cloves, eggs and lemon juice. This is like a cross between pumpkin pie and gingerbread - it’s super good! Great warm (it solidifies and turned more into a textured custard after I took these photos.)
