Herbs and spices can add flavor and variety to your food.
Use a little at first, then add more when you are sure you like the flavor.
To substitute dry herbs for fresh, use ¼ teaspoon powder or 1 teaspoon crushed for 1 tablespoon fresh chopped herbs. Some herbs and spices are expensive.

Herbs and spices lose flavor and can spoil or get buggy if kept in the cupboard longer than a year.

today was so random
woke up at literally 8am and told to pack my stuff cause we would be having a mini beach vacation. and I was like oh-okay despite not even writing a word for my essay. anyway look at this fit and also cơm tấm sườn bì chả (a classic must have)

then we drive for about like 2-3 hours and we all got really hungry so we stopped by like a familiar dining spot and everything was so good, no wonder they're so crowded like literally so many cars parked outside. rating goes
Indian volute grilled with scallion and peanuts: 8/10, love me some delicious fresh snail
octopus vinegar broth: 8.5/10, I love love this dish so much, every version with vinegar broth is top tier
fish steamed soy sauce: 8.2/10, usually I dont like fish but this one got mushroom inside so it a win

then we finally arrived at our hotel and i went into frenzy writing cause like im flopping majorly, need to get it done also the hotel was so like beach inspired European vibe like idk

DINNER OUTFIT CHECK. got this dress from muji it made me feel like a princess in the way when I walked up stairs I had to pick it up so it wont get dirty like, very flowy and layered too

then we arrived at the sushi restaurant like we just got recommended it online and the review were great but then outside it looked so fancy? like damn you got a koi fish lake?? also the employees were super nice and the vibe was absolutely vibing

now onto ranking. honestly i loved every dish today lolll it muaw muaw chef kiss
sashimi: 9/10 love everything especially the prawn and salmon, it just peak fresh
seaweed: 9.8/10 a must have when u got eat sushi like with the sesame sauce! absolutely!
otoro tuna: 10/10, so soft and melt in my mouth, I suspect I gonna work out extra hard for this one
salmon belly and salmon sashimi: 9/10, equal slay
eel rice: I only got a tiny bite but the seasoning was top notch and the eel was so buttery soft
grilled fish (and grilled salmon head not picture): 8.5/10. okay I just dont like grilled fish much
also not picture salmon suchi roll: 8.9/10. good sushi roll
tempura: 20/10. AMAZING. the first bite is like u chomping down cloud
sukiyaki hotpot: 10/10. wished we got a bigger pan and broth but this was so good. and the beef literally went mega melting in mouth and I snatched that mushroom so fast so of course this one rating great hehe

after meal we drove around the like other part of the beach that had lots of rocks and stuff so there not a lot of people bathing. but that part now the proud owners off several big aesthetic coffee shops with the same wooden house, golden light aesthetic. like I suspect all the money went into renting the land and decorating because the milk tea was just like, 90% milk 10% tea. the boba was fun tho

Loki is settling in. Mostly, he wants to eat and sleep. The few times I have let him out of the Borg Cube, he's been out for 10 minutes, gets overstimulated, and runs back to his Safe Place. Right now he is learning how to play with toys, and loves his scratching posts and pads. He's been through so much. I have asked that the ex get a visit from his karma.
Unpleasant Subject Ahead
Another thing that this whole thing has driven home is how important it is to get your affairs in order - even if you don't have cancer. Loki's mom was getting a divorce and fell so ill so fast that she was unable to make her own medical decisions within days of admission. Even if you are getting a divorce, even with an actual protective order, your spouse is still the legal default person to make decisions for you. They are your legal heir. If you don't have a legal spouse (marriage certificate), it's your adult children, if you have no kids then your parents make those decisions even if you're a legal adult. If you have no immediate family, then your extended family gets called in.

It's hard to think about, but when your surviving extended family is a mess (like mine) you want these things in order. Hell, have them notarized so that a judge can look at the plaintiff and say, "What the hell is the matter with you?"
Golden Treadmill
I'm strapping myself in with another 'write to spec' contract. Yep, it's more porn. I negotiated for one every six weeks from February to November. I need to visit Amazon and stock up on barf bags and brain bleach. I did say that I won't write noncon or (yes, this is a thing) racist tropes. It's hard for me to write hardcore body horror. I might be writing horrible porn in order to pay off my medical bills that makes my pussy slam shut like an angry clam, but I have standards. That being said, the editor delivered the advance to my freelance bank account and the outline to my inbox.
Whoo boy.
In my defense, I did not know that 'monster fucking' was commercially viable.
Cat in the Kitchen
Rediscovering food has been a wonder. As promised, my rearranged innards make it trial and error, but the errors seem to be self-correcting. Gut flora does come back, but I have not been brave enough to venture into my spicy Indian, Chinese, and Mexican foods.
I've been making casseroles/hotdish because they freeze well and sometimes the fatigue renders me incapable of anything other than pushing a button.
For casseroles/hotdish you need:
Vegetables: Frozen works fine. Canned is saltier, so if you go canned use 'less salt' brands. If you are using mushrooms, frozen, fresh or dried is best. I find canned mushrooms have a very weird metallic taste.
Starch: Potatoes, rice, pasta/noodles, bread. Yes, tater tots count.
Protein: Can be vegetable protein, beans, canned tuna or salmon, or meat. Smoked salmon is delicious in casseroles and soup, so I go to my local deli on Friday to get lox ends and trimmings.
Sauce: Canned soups (cream of ____), jarred or canned pasta sauce, or packaged cooking sauces and gravies.
Topping: Cornflakes, tater tots, cheese, potato chips, stuffing, etc.
Flavor: Dried herbs, onion and celery, garlic, spices.
Slowcooker meals are great, too, and follow the same rules as casseroles/hotdish. But my favorite caserole dish is my Gran's Lancashire hotpot - lamb neck chops, potatoes, onions, and more sliced potatoes on top for a crispy lid.

Friday 23rd June 2023
Breakfast this morning again in the hallowed surroundings of the main dining room where starched white linen table cloths abound and riff raff don't. Eggs Benedict tailored to one's needs with the requisite smoked salmon, all most civilised and above all, peaceful; no harsh and shrill American voice nor screeming children. Tranquility focused entirely on starting a new day with a meal to break the fast of the night now passed. Then the customary jaunt around the deck at speed, with a more chill but highly refreshing sea breeze direct from the arctic today. The sun not far away but not quite managing to clear a way through the clouds. Not many to share the experience with on deck apart from a few optimistic whale watchers excitedly exclaiming at a suspicious parting of the calm waters and a flourish of binoculars and telephoto lenses. Often to be disappointed and equipment stood down.
Today we docked (nautical term) at Ketchikan, Alaska. We were booked on the Rainforest Wildlife Sanctuary , Eagles and Totems tour.
Ketchikan we liked a lot. It was a frontier's town again set on yet another island. Together as an archipelago in SE Alaska it accounts for an area of rainforest the second largest in the world. The majority is not now commercially felled and is protected from logging. We were shown through a section of rainforest and native species of trees; Cedars, Red-Alders, Spruces and Hemlock most common. Interestingly felled trees on the forest floor provided sustenance for propagating seeds; a substitute for topsoil. With competition for light, the strongest will succeed. Our guide told us that bears inhabit these woods, and we suspect the code words 'ham sandwich' whispered into her radio related to a sighting of one close by which she wished the group to avoid. Certainly fresh bear poo in various sites might substantiate this. We saw spawned salmon in the river that when a certain size will make their way to the sea via Herring Cove; the route their parents will have taken a fews weeks previously and generations before them. More bald eagles, purple and blue swifts circling the river, a couple of owls in a sanctuary where they will stay for the rest of their lives because of injuries sustained in the wild rendering them unable to hunt for themselves. Oh, then there were totem poles. Bit of a mystery with this one. It would appear that the two main First Nation's tribes in this area have symbols of the Raven and the Eagle. A totem pole will have one or the other carved on it and it will be placed prominently in their village. A Raven wanting to marry must marry an Eagle and vise versa. We were introduced to an Indian chipping away at a new pole and we asked him if the pole told a story. Yes he said. What is it? We asked. Can't tell you, it would take too long. Give us the quick version then. That will take at least 10 minutes and I haven't got that amount of time. With that he resumed chipping.
The bus returned us to Ketchikan where we partook of an Alaskan beer or two in a seedy downtown bar called Asylum. The clientele on the rough and ready spectrum, part American, part Indian; the atmosphere heavy with the sweet aroma of cannabis. The thick set barmaid, possibly of Russian descent decidedly dismissive of our tourist credentials and indecisive approach to beer selection. We chose one described as Amber on the recommendation of the drunk on the barstool. With our integrity still intact we held our beers and heads aloft and found somewhere to sit in the courtyard. Unfortunately I had to return and grovel to Greta for the WiFi password. Replete and refreshed we strolled the high street to the old Red Light District, Creek Street. The sign said, 'If you can't find your husband, he's in here'. Well at least that clears that one up!
We very much enjoyed Ketchikan so much so I bought the tee shirt. It was agreeable, clean, well presented and perhaps with the exception of Greta, friendly considering 3 cruise ships dominated this small town of just 14,000 souls that day.

There is something unique about the month of September at BodyHoliday which makes it enticing. As the sun's intensity begins to wane and a pleasant wind sweeps across the island, a feeling of that newness is very hard to evade. This year, I was lucky to relish one of the experiences that I had been hearing about for so long and which many people carried in whispers; the renowned culinary experience at the BodyHoliday’s award-winning restaurant, TAO, during September Solos.
Even before I arrived, I knew I would find the exciting essence of September Solos much more special than I had anticipated. It was obvious that I was about to enter into a luxury that catered for the needs of such special individuals, hordes of solo travellers cued up and ready to partake in an experience that was still not ordinary. The magic of BodyHoliday and the warmth of togetherness which was brought about by the September Solos was very much there. However, it was only when I finally got to sit for dinner at TAO that the extent to which this experience of communal dining was going to influence the period that I was going to spend here hit me.

TAO, perched above the resort’s Wellness Cafe has been well-received by many international visitors because of the combination of Eastern and Western factors. The minute you come in, you are welcomed with modern interiors that depict minimalistic and sophisticated Asian designs.
Upon arrival, I made friends with a few other travellers who were also alone. What distinguished this night from any other night of solo travel was the connection that had been fostered during the course of September Solos. To eat in a BodyHoliday community is to eliminate strangers and create new connections until the end of the meal. And, there is no better meal to share than that designed by the master’s hand in TAO’s kitchen.
The TAO menu does not simply feature Japanese foods; it offers a range of Thai complexity and west indian fusions. It started with small serving portions in gradual increments— a sushi platter with tuna, salmon and snapper sashimi. It appeared like an art, realistically garnished and arranged seafood, thinly sliced disks of order-fresh tuna and salmon and snapper. The lovely, melt-in-the-mouth pieces of sashimi fish we had, spoke well of the freshness of their ingredients and cooking quality.
The last dish was the Thai green curry, which I was amazed to learn was both a light dish and an indulgence too. The coconut milk, the lemongrass, and the fresh herbs all came together in a harmonious melody that I can still recall on my tongue today. And with a glass of chilled white wine, this meal was not just a meal anymore, but also a time to enjoy the food and what was being talked about over the dinner table.

At TAO during September Solos, perhaps one of the greatest highlights in the restaurant’s design was how they integrated the component of the dining with a sense of community. The experience of eating food with others is one thing; however, to have a centralised place where there is a specific purpose of bringing people together and sharing experiences, particularly through food, is a totally different but unique experience.
For instance, instead of having individual appetisers, they were arranged on shared plates so that each person could taste something. This appreciated aspect of dining allowed for food to serve its true purpose - connecting us on a very different level, which is so different from the usual cuisine formality that is associated with an upscale restaurant.
The large compartmentalised style was not only about sharing meals - it was moment of exchanging stories, experiences, and sometimes even laughter. I discovered a fellow diner’s account of an expedition to the Pitons, another guest’s dawn yoga session on the deck, and the beatific meditative state of someone who had been meditating for a week. The sharing of stories brought other dimensions to the food, creating the feeling that the food tasted better because there were other people involved.

By the time we sat down to enjoy dessert, a luscious molten chocolate fondant cake covered with raspberry coulis was running centre stage, the place was already abuzz with the excitable voices of friends made. Even as I took my last crumb, it struck me that this was exactly what BodyHoliday was: a sense of well-being that encompassed the body and more importantly, the spirit.
The TAO experience continues to unfold
Dining at TAO is not ordinary; it is taken to that level where eating becomes an experience. The team at TAO appear to have that touch, which allows them to tap into the technicolour possibilities of flavours, phenomena that elicit purrs of delight. From the taste to the way the food has been arranged. Every single item that is served up is put together with extreme accuracy. The level of precision is impressive, each and every plate appears to be a canvas, spruce leaves, and very fresh ingredients or food items that have been densely coloured.
During my stay, I visited TAO regularly, and with every visit, I uncovered new delectable treats. One evening, I had the pleasure of eating miso-marinated black cod which was herby, salty, sweet and moreish as the glaze was very sticky. Some other times it was a delicious green papaya salad, dominated by firm green papaya, lime and an array of hot chilies.
Much as the food was great, I was particularly impressed as to how the activities team was able to set up the September Solos communal dining experience at TAO . This was more than just sharing a big rectangular table with some others. This was about telling a story. It was clear that the team had gone great lengths to ensure that our dinner was not just about eating individually, but that food served as a uniting factor.
Besides The Food: The TAO Approach
When I started to think back about my time in TAO, I came to realise that the restaurant was not only about providing excellent service to its guests, but it was also about upholding the BodyHoliday principles. The blend of Western and Eastern philosophies at TAO is similar to that of the resort in that it seeks to make health and wellness by merging traditional and contemporary ways. TAO for me turned from being merely a restaurant when I was a guest – it was a space of contemplation. Every course became an excuse to retreat, relish a moment, and engage not merely with the people but with myself.
The Long-Lasting Significance of September Solos
With only a few days left at BodyHoliday, I could not help but think back at how much of an influence September Solos including the evening spent at TAO had on me. I had gone to BodyHoliday seeking a reset, an opportunity to get away from the demands of the day to day activities and concentrate on myself. What I came across was even deeper: More connected and more joyful than I appreciated.
It was partly because of the shared meals at TAO which enhanced this. It was not simply about eating; it was about living. In the end, the meals we took at TAO built the base for more enduring ties, fulfilling ones which made each of us feel part of a bigger picture.
Ever since boarding my flight back home, it was more than visuals of wonderful food and beautiful scenery that replayed in my mind but also a new sense of being in relation and oriented: to others, to the world, to myself. BodyHoliday and TAO is enchanting because they are not locations that you just go to, rather, it is something that lingers regardless of whether you have already gone back home.
In that regard, September Solos and TAO are more than just those two aspects of my trip — they are proof that the best moments are those when we are with others. I am indeed thankful to them for that.

大家好! Pa and I caught up for lunch at the Hong Kong food court. We ordered soya sauce chicken with a side of blanched choy sum in oyster sauce. Hokay, let's talk chicken breast because whether it's delicious depends on how it's prepared. Poached, steamed, simmered and sous vide usually leaves the meat somewhat tender and juicy; we enjoy this. Roasted or fried is just... gross; too tough and dry. Soya sauce chicken breast is delightful and one that we'll happily eat. Their choy sum is easily the star of the show; they were crunchy, fresh and mildly sweet. This meal is very delicious. I'll definitely be back to eat it again.

Monday afternoon was scorching, so I headed to a Korean diner located in a nearby mall. I tried their warm soya sauce noodles with shredded carrot and cucumber, braised pork and seaweed, steamed eggs and a bottle of water. The meal came with a small cup of clear broth with some type of bean sprouts. Mmm, this was yummy! The soya sauce was slightly sweet and lightly but evenly coated the chewy, slurpable noodles. The veggies added crunch. Korean steamed eggs taste very different from chawan mushi, but they were pleasant. I'll be back to try their tofu soup and bibimbap.

Tuesday afternoon was sunny and warm, but not as scorching, so I walked over to the newly renovated coffee shop 5 minutes away from home for Japanese stew. This time, I tried their Japanese chicken curry with rice and a side of cucumber salad. The tangy salad was very refreshing to eat when the weather is hot. As for the stew, there were potato, carrot and onions besides chicken. I would've preferred the potato to be softer; otherwise, it's hard to go wrong with Japanese curry. This meal was tasty, but I prefer the miso salmon stew. Still, I'll be back to try their other menu items.

DL and RY joined ML, SC, MI and I to explore a new food court near the office. MI ordered white bee hoon (thin rice vermicelli) and DL had indian mixed dishes and rice. The rest of us made a beeline for the Korean food stall. I had their kimchi ramyeon, which came with either panko-coated fish or chicken. This tasted just average. It wasn't very nice and wasn't yucky, although the fish was quite crispy, the noodles were slurpable and there was a decent amount of vegetables. I would've preferred the broth to have a more robust kimchi flavour. I wouldn't go out of my way to return to this food stall, but don't mind trying what other stalls have to offer.

The weekend is approaching, WOOHOO! I'm looking forward to the coming few weekends as there're some catch ups and perhaps a short getaway. I so need a break from work! Even as I look forward to unwinding and relaxing, my prayers are with the thousands of Palestinians suffering in Gaza. Never ever have I lost as much trust in human rights and the rules based order as I have over the course of this genocidal war. Not sure I'll ever believe in them again. 下次见!
