I have yet to make sourdough bread that meets my standards for bread BUT I love my sourdough starter like a son

a three day weekend is generally bunk because you come back to work to all the shit you didn't do the extra day off and people are likewise cranky because they are also dealing with the bunkness and you do the 18bajillion doodads that need to mysteriously get done even though they survived without while you were supposed to be enjoying your extra day off but you cannot point that out because then they might think you are superfluous and fire you oh and the CEO notices you because there are literally 14 reports due (heyo first of month reporting) and because you are Good At Your Job they all go out before lunch, but the email traffic influx to their inbox has made you *visible* to CEO and now they want to know why these reports *are* and you better have an answer that isn't ¯\_(ツ)_/¯ even though you don't make reports for fun (you do, just not work reports) and the recipients who actually requested that data in that format probably have a better answer so anyway imma crack open a pouch of aldis butter chicken and pour that over some fries and cilantro (soap for haters) and add some fresh chopped garlic lightly fried in butter with kashmiri chili powder atop that bish and drink a Bunch of Wine. this is a poor decision but life is fleeting and no one actually cares that your dinner is carbs and butter and alcohol. chicken is a protein and garlic is a vegetable. as long as you can manage to find some measure of enjoyment in this bunk ass stew of dear fuck don't fuckin fire me, pls god not another misogynist fascist weirdly obsessed with other people's genitals and organs and what said pieces of meat touch in a consensual manner, i say eat your curry fries drowned in spicy butter and finish that fuckin bottle of wine darling you got this

this week i’ll be making :
- crispy pork belly tacos w pickled red onion + smoky lime cream sauce, a copycat from a local restaurant my gf and i adore
- rosemary rhubarb olive oil cake OR olive oil cake w blackberry buttercream + orange curd (would love any input on which of these i should make)
- chili butter grilled shrimp + grilled lemony asparagus, im typically a shrimp hater bc the texture freaks me out but i had a realization that maybe i’ve just only had overcooked shrimp so i wanna give it a shot
- pan seared salmon of some kind ?? w miso maybe + spicy cucumber salad
- cheesy smash burgers to use up my homemade pickles and buns from making chicken sandwiches last week, my new roommate is wanting to make them so i may delegate this one !
- marinated chicken to top some cold crispy lettuce and lemon tahini roasted veg, eaten cold
i want to bake something else too, but i’m not sure what, any input is appreciated :) i also have a generous amount of goat cheese and smoked salmon to eat this week so i’m sure there will b some Toasts!!

I'm not even mad about the celsius vs fahrenheit debate – yeah it's pretty much what you're used to in your day to day etc. I'm a celsius gal which makes F sound so much funnier every time people casually mention it's over 100 degreed outside. I imagine people boiling alive.
I'm not even mad about the inches vs meters – again it's a habit thing and at least an inch is a set unit of measurement. Why do people prefer to stack 12s instead of neat round tens is beyond me but hey, live and let live.
But for the love of god, why are people making their cooking and baking adventures so much harder by measuring out the ingredience iN VOLUME? I mean cups and I am a cup hater because I have enough understanding of physics to know that the fucking air can interfere with volume measurement but not the simple and precise weight measurement.
2 cups of chicken - I can promise you I can make both 500g and 100g of raw chicken meat take up exactly the same volume. Same with flour – you can accidentally knock more air into it or level 2 cups slightly differently and yeah it does matter for certain recipes.
Or I can take my cheapskate scale and measure out precisely 267 mls of flour or water or milk or meat or diced onions without having to calculate "oh it's one full cup and some other weird amount on top". And my chad scale from Lidl can do all of it - ml, grams and ounces with no issue.
Whenever I see a recipe that uses cups I'm also baffled – it Requires me getting the volumetric measurement tool, sticking it full of butter hoping there's not too much air in between chunks, and then scooping it back out into the dish I actually need it in. Or I could place my mixing bowl on a scale and cut 69 grams of butter directly into it saving steps and washing up. And don't talk to me about conversion calculators!! Because your cups are not standardized!! And I'm the one who has to check if the person writing the recipe is from US, UK or Australia! You all have different cups!!
Why do people choose this hardship. I understand metric is fr*nch but it's one of the rare wins for them, aside from guillotine. Come on.

god its hard to be a hater when talking about baked goods...... i Love baked goods.......
on savory: i Love bread (sourdough) nothing beats a good bread i Love you ciabatta i Love you pão alentejano... love it with butter, cottage cheese, tomato, hummus or paté. OMG GARLIC BREAD. i also love more elaborate cheesy bread, ie, pizza and pizza rolls and puff pastry pizza, & merenda which i cant find the translation for... i also love meat pastries with like sausage or chicken or pigleg/duck if were fancying it up... yup. least favorite ill go with savory tarts... no thanks. the filling can be overpowering. unless theyre mini tarts! mini tarts slap. and i def dont fw sliced bread unless the situation is dire and breadless
on sweet: egg-based pastries are my belovedest children... torta de azeitão, pastel de nata, palmier recheado you'll always be famous. also thumbs up for a good sweet croissant and salame. and aaaa i love cake. esp fluffly chocolate or carrot cake, a little humid wuth no/minimal frosting Unless its like a basic cake with strawberries and chantilly or jam and then you can go crazy <3 im a pie supporter, esp apple and lime/lemon. its hard to pick a least fave, im googling baked good lists to see what else is out there and i guess i dont like pastries that dont look good.. either kind of dry or with TOO much fake sugary frosting... a good muffin or doughnut can be hard to find... also i dont get macarons? or most traditional french pastries like cream puffs i dont like that... they got the millefeuille right and Thats It.

Wellness Wednesday:
An Off Week...
This week has been a bit odd... first off...
I was so exhausted that I slept through a workout..
Had bizarre exchange with a friend...
I took some short notice/impromptu PTO from work...
I attended a wedding out of state...
My sleep schedule was beyond obliterated that I felt like a zombie for an entire night...
And
I had to report to my works HQ for the first time in over 3 years
I was a bit shocked to discover that I still was able to function and lose weight.
But
Beyond All That...
Tomorrow, I am going to see the new Indiana Jones Movie.
Despite what the haters say - I am going in with an open mind and open heart.

Not enough soup recipes in the notes. Here are some of my favorites, with my modifications.
This is one of my favorites. It pairs well with homemade bread and I often freeze half for later because it makes a ton and we are only two people. I prefer to cook the sausage separately while everything else cooks because it takes less time that way. Also I throw in a little bit (like half a teaspoon) of sambal oelek at the end because I keep it around and it spreads through the soup better than just red pepper flakes. I don't usually add the celery because my husband is a hater and I don't miss it.
Excellent for role-playing as a well-off peasant, especially if you make bread with it.
This one I make basically as written but note that it takes like three times as long as the recipe says to cook. Fifteen minutes of prep? For all those veggies? Are you insane? I watched a whole episode of The Mentalist the last time I did the veggie chopping prep. That is fine. Just plan for it.
The recipe doesn't tell you when to add the garlic. Just put it in with the onions and peppers. Also I like to throw in some chicken to make it a meal. I cook a small package of chicken thighs. Toss with oil, season with salt, pepper, paprika, and garlic powder, and bake on a baking sheet in a 400 degree F oven for 35-45 minutes. Dice and add to the soup when it's done.
Cooking the butter/flour/milk part of the soup in a wide pan with short sides will make step two take much less time than if you cook it in a smaller saucepan. If you only have a small saucepan, do step 2 first.
Again, I leave out the celery. I usually use a bit more potatoes and ham than the recipe calls for and I cook the potatoes longer than directed because I like them to be very soft and sort of dissolved into the soup. Garnish with cheddar, chopped green onions, and/or cooked bacon if you're extra.
It's Autumn, which means if I make a Big Pot of Soup it will Fix Everything. No one fact check me on this. We need to let the soup speak for itself.

ok guys i am so back....last night i got shit sleep and overslept this morning. i'm sad because i was supposed to do homework with sawyer today but i woke up feeling angry + unwell. anyways so in order to avoid complete sunday derailment, i had to make myself a delicious breakfast. some of y'all are gonna be haters but real ones understand the possibilities of cottage cheese toast. originally i was going to make it with caramelized onions and mushrooms because i have these oyster mushrooms from the other night when i made mushroom-leak pasta for virgile-minh and myself (more on that in another post), but once i cooked the onions i thought that might be a bit too rich for the morning (i got lazy).
so, for the onions, i melted butter on medium-high and once it was foaming i tossed in thinly sliced yellow onion. then i covered it and let the onions steam for a couple of minutes, until they softened and began to get darker. while they steam, you'll want to stir them just a few times and i also added more butter because they seemed dry and were starting to burn more than i wanted. after a couple of minutes, i took the cover off and turned down the heat to medium. they cooked for another 15-20 min while i stirred and added water occasionally to scrape up the brown bits stuck to the bottom of the pan. the water ended up being fine, but i would suggest using chicken broth for more flavor. once the onions are soft and browned to your liking, add a bit of wine or white wine vinegar for a little tang (the pan should be hot enough that the liquid sizzles and evaporates). i used red wine because that's all i had, but most recipes suggest white. i also used some white wine vinegar and i think the combination turned out well. finally, season with salt as needed.
okay so YUM. it is so delicious. if you're a savory breakfast person like myself, then you should def give this a try. i mean, who doesn't want to start their day by eating half an onion? besides that, the cottage cheese has lots of protein, which is absolutely necessary before a day of great studiousness. for the toast i used a whole grain seed bread because i am a slut for seedy bread, but i also think sourdough would be really delicious too.

Rotten milk and bitter honey
I hate to sound like Candace Owens but I don't have to support your business simply because you're black owned. Are we disproportionately disenfranchised and discouraged from opening any business besides a hair salon and barbershop? Yes, and I have personally heard stories of business owners of other races trying to sabotage successful black business owners. But let's not act like we sometimes do ourselves a disservice with our lack of preparation and customer service. I understand that others have a head start, and sometimes a hand up but being rude, having outrageous house rules, not adhering to scheduled hours, not communicating any changes to the public or your staff, being dirty, not offering expected services, being ignorant about common business purposes, etc is a sure fire way to fail, no matter what the comments or paid reviews say on social media. You can either be rude and have a great product or have great customer service and be subpar, but you can't be both. It's like at work, you can be a personality hire and just an okay employee or you can be an exemplary employee that is a bit socially awkward but both rarely receive the right to exist in the same space.
Chick Fil A is known for their customer service, which is part of what makes them so popular. They are quick, friendly, efficient, consistent, and their staff pretends like they're happy to do their jobs. One time, I pulled up to the drive through and the owner was there handing me my coffee like any other employee. Now, Chick Fil A food is probably a 7/10 on their best days but the customer service is a 9/10. Is it the the best chicken sandwich I've ever had? No, that honor goes to the Honey Butter Chicken at the Roaming Rooster in DC, but Chick Fil A is decent and consistent. I can count on it in a pinch. Which is why they will exist for as long as they wish. Too many people want to compare their business/brand/ and or service with Gucci, or any other luxury brand. because it's luxurious but draw the line at being compared to Chick Fil A or Amazon when it comes to customer service and delivering their products in a decent time frame. Or, they want to dismiss, or diminish, the complaints of their consumers by stating we let other races disrespect us or we take disrespect from places like Walmart, okay. I, personally, besides bills and other expenses I can't control, decide how I spend my money and I don't spend it with people or places where I feel disrespected. I don't go to my neighborhood Walmart because the lines are too long and I just don't like it but I go to the next one because they're quick. Like, I said other people may take disrespect because they want to support black owned businesses but I don't.
Too many people want to collect a check for doing nothing but the bare minimum. Every business requires some level of work. Passive income only exists for people rich enough to live off of the interest of their investments. That's not the average business owner. If you passively run your business, you will be actively unemployed. Too many people want to eat the fruits of their labor while minimally sowing. Stunting with homes, cars, and bags because people like to show off their money, is why a lot of business fail. Instead of taking the profits and putting it back into their business by hiring more staff to help with increased demand, investing in software, an accountant, consultant, pr, marketing, a manager, research and development, a larger space, increasing employee salaries, etc, they use it to enrich themselves and wonder why they fail. And when they do, they go on tirades calling their customers broke haters, who only want to see black businesses fail. No, people wanted to support and decided they didn't like the experience they had with your business and decided to take their money elsewhere because the business wasn't dependable or consistent. The Real Milk and Honey is inconsistent because they didn't want to serve regular people but broke their necks to serve someone famous. Unless, Keith Lee plans to move to Atlanta, he won't be a consistent customer but they turned off a lot of people who could've been. Too many business owners want to be hood famous and stunt on these hoes instead of truly building, fortifying, and recession proofing their businesses. We're in a recession and people still have Chick Fil A and Amazon money but none to get their hair done by you or eat at your mediocre restaurant with bad service.
The customer is always right because they pay the bills. I guarantee, that in a year or so, The Real Milk and Honey will be closed and/or running unusual specials. Why? Because instead of taking responsibility or even being silent, they shaded Keith Lee, which is a no-no in internet land, where most of their customers will come from.
