chocolate chip buttermilk scones
1 large egg, beaten
75g (1/3c) Greek yogurt
1/4c light buttermilk
1tsp vanilla extract
240g (2c) all-purpose flour
64g (1/3c) white sugar
2tsp baking powder
1/4tsp salt
6tb cold butter
150g chocolate chips
preheat oven to 375F
whisk together the egg, yogurt, buttermilk, and vanilla
in a large, separate bowl, whisk together the flour, sugar, baking powder, and salt
cut in the cold butter to the dry mixture and mix in using the back of a fork, until the mixture looks like fine crumbles
add the chocolate chips into the dry ingredients
add the wets to the drys, and fold until just combined
lightly flour a surface (~5g) and turn out the dough, kneading gently until a sticky dough comes together
line a baking sheet with parchment
place the dough on the parchment and pat into a large circle, about 1" tall
cut the circle into 8 wedges with a sharp knife, but do not separate
sprinkle the top of each wedge with an 1/8tsp of white sugar
bake for 20 minutes
remove and cut through the wedges again
bake for 5 minutes, then remove and separate the wedges from one another
bake another 5 minutes ((30min total)), or until the scones are golden-brown and no longer doughy

okay what the fuck is with my blood sugar lately. a full week of waking up to 150 and then it finally drops down to waking up to 120, only to. fucking. i eat a burrito in anticipation of doing a lot of exercise, DON'T, check my blood sugar 2 hours later and it's 100?? and like, i know some weeks i do more or less at dance class, but eating 64g of carbs at 105 and then coming back from dance at *89* is crazy.

Ingredients
1 (3 pound) rabbit, cleaned and cut into pieces . 1 tablespoon ground black pepper . 1 ¾ teaspoons salt. ¼ cup vegetable oil . 1 onion, chopped . 1 cup water. ¾ cup ketchup . 1 ½ tablespoons Worcestershire sauce . 4 teaspoons white sugar. 1 tablespoon paprika . 1 clove garlic, chopped
Preheat the oven to 350 degrees F (175 degrees C).
Season rabbit pieces with pepper and salt.
Heat vegetable oil in a large skillet over medium-high heat. Add rabbit; cook in hot oil until brown on all sides. Place in a 9x13-inch baking dish.
Combine onion, water, ketchup, Worcestershire sauce, sugar, paprika, and garlic in a medium bowl; mix well, then pour over rabbit.
Bake uncovered in the preheated oven, basting frequently, until very tender, about 90 minutes. An instant-read thermometer inserted into the meat nearest the bone should read at least 160 degrees F (72 degrees C).

Overnights oats with rolled oats 45g, light soy milk (50ml), chia seeds (10g), cocoa powder (5g) and greek yoghurt (35g) with some water (100ml)
On the side I had a bowl of strawberries (135g) and blueberries (55g)
Cup of coffee with full cream milk (20ml)
Cal: 343 | Protein: 15.5g
Thoughts: early morning start today as I have work at 8am, I ran for 10mins then another 10min incline walk - with an added bonus of a core workout. I really do appreciate having the chance to workout in the morning as it makes my nights less rushed and I feel that I have more time to do things throughout the day. The coffee that I drank was made at work so I didn't really drink it until 9am.

Thoughts: I started having the fruits at 10:20am but I officially finished the container at 3pm. That way I was able to chew on something after lunch and reduce the risk of feeling too hungry before dinner. Normally I have a different protein bar but these ones are actually quite nice, thought considerably less protein.

On the side I had some kimchi (64g) and tuna in spring water (37g)
For a sweet treat, I had a bowl of frozen mango pieces (58g) and a cup of tea with light soy milk and some honey (5g)
Cal: 245 | Protein: 18.7g
Total Cal: 1148 (Goal 1200)
Total Protein: 66g
Thoughts: I think today went so well, I'm having at least 1200cals and it is filling me up. I'm gaining more control over my cravings, and feeling more full throughout the day. I have thoughts of the food I want to eat over the weekend rather than eating it right then and there. Although I'm not too worried about the slight gain in weight as I think it is just water weight.

huckleberry chocolate chip scones --- the perfect mix of tart and sweet! i froze berries we picked in the mountains last summer, and re-discovered them in cleaning out the freezer. perfect timing with summer just around the corner ❤️
1 large egg, beaten
75g (1/3c) Greek yogurt
1tb milk
3tb Greek yogurt
1tsp vanilla extract
270g (~2c) gluten-free all-purpose flour
64g (1/3c) white sugar
2tsp baking powder
1/4tsp salt
6tb cold butter
70g chocolate chips
70g huckleberries
preheat oven to 375F
whisk together the 1tb milk + 3tb Gree yogurt and let stand for at least ten minutes
add the egg, 1/3c yogurt, and vanilla to the milk-yogurt miz
in a large, separate bowl, whisk together the flour, sugar, baking powder, and salt
cut in the cold butter to the dry mixture and mix in using the back of a fork, until the mixture looks like fine crumbles
add the chocolate chips and huckleberries into the dry ingredients
add the wets to the drys, and fold until just combined
turn out the dough, kneading gently until a sticky dough comes together
line a baking sheet with parchment
place the dough on the parchment and pat into a large circle, about 1" tall
cut the circle into 8 wedges with a sharp knife, but do not separate
sprinkle the top of each wedge with an 1/8tsp of white sugar
bake for 20min
remove and cut through the wedges again
bake for 5min, then remove and separate the wedges from one another, placing them on the sheet with the tips pointed out
bake another 5min, rotate the pan, then bake for another 5min ((35min total))

ventured into r/coffee because i wanted to try making cold brew and the thread i found was hilarious because 50% of the comments were "use 64g of fine-ground espresso and 1200 ml of water EXACTLY and combine them in a SPECIAL COLD BREW BOTTLE with a SPECIAL FILTER and wait 48 hours before pouring it through a DIFFERENT FILTER and consume within 72 hours" and 50% are like "yeah i just chuck a fistful of grounds into a bucket and fill it the rest of the way with water and leave it overnight. tastes great"

Thoughts: My work is so energy consuming… when people say “wow, I would never ever wanna be a teacher” I totally didn’t understand them before I got my degree. Now I’ve been a teacher for 4 years and I totally understand what they mean now. But probably not for the same reason 😅😮‍💨 I’m so tired. I’m so frustrated. I’m so done with dealing with everyone else’s emotions but my own. I’m so over having to teach parents how to be good parents and also to take care of their children when they’ve failed their whole parenting role. Oh well… it’s almost summer! Let’s st4rve until then 🤫
