I'll want to break down the chicken and beef into pre-marinaded freezer baggies with any roots or beans or sauces paired with them in a lil bundle of baggies, that way meals become as simple as popping a baggie set into a cast iron in the oven or on the stove. The last of the current priority garden, home, and body ingredients are in the mail, and I'm just waiting until I have the last of my salts and amino acids to mix them up.

New York-Style Bagels
The New York-style bagel is truly iconic. When I lived in NYC I couldn’t get through a week without a few of these! When I moved out of the city, bagels were among the things I missed the most. Luckily, they are super simple to make at home.
Bagels were brought to NYC by Ashkenazi Jewish immigrants from Poland in the 1800s. Overtime, they became a widespread local staple, and they’re still a popular mainstay to this day. New York-style bagels are distinctive because they are boiled before baking. This is how the famous chewy texture is achieved.
I’ve included a recipe for “everything seasoning,” but these bagels are also great plain. As far as fillings, these bagels are perfect with just cream cheese and chives or with the addition of smoked salmon, capers, pickled onions, and dill.
Ingredients:
Bagel dough:
297 grams/320ml water 90F/32C
10 grams dry yeast
23 grams white granulated sugar
500 grams bread flour / Manitoba
6 grams/1 1/2 tsp salt
1tbsp baking soda/malt syrup (optional)
Egg wash:
1 egg
1tsp cream/milk
Everything seasoning:
Makes 3/4 of a cup - so there’s some leftover!
2 Tbsp + 2 tsp white toasted sesame seeds
2tbsp black toasted sesame seeds
4 tsp Maldon sea salt flakes
2 tsp poppy seeds
2 tbsp dried minced onion
2 tbsp dried minced garlic
Method
Whisk in the yeast and sugar to the warm water, and let it rest for about 10 minutes or until frothy.
In a large bowl, whisk bread flour and salt together. Add in the yeast mixture and stir until the dough is shaggy. Once everything is well-combined, turn it out onto a lightly floured work surface and knead for about 10 minutes or until the dough is smooth and pliable. You can also do this in a mixer with the dough hook.
Put the dough into a lightly-oiled bowl. Cover with a damp towel and place in a warm place away from drafts (I use the oven with the light turned on), Let it ferment for about an hour or until doubled in size.
Then, punch down the dough to deflate it and turn it out onto your bench.
Before you move on to the next step, put on a pot of water to boil and pre-heat your oven to 218C/425F. You can add baking soda or malt syrup to your water, but this is optional.
With a bench scraper, split the dough into eight pieces that are roughly the same size. I cut it in half, then quarters, then eighths. Pinch each piece to create a seam and then place it on an un-floured work surface (seam side down) and move your hand in a circular motion to tighten it into a ball.
Place the dough balls onto a baking sheet lined with baking paper or a silicone mat. Cover with a damp towel and let them rest for 10 minutes.
When your water is boiling, pick up a ball with a floured hand and poke a finger straight through the middle. With two fingers in the hole, slowly turn the bagel to widen it. Then carefully drop the bagel into the water and boil for 1 minute on each side. Drain well and place on a baking sheet lined with baking paper.
When all the bagels have been boiled, whisk the egg and the cream together and brush the bagels with the egg wash, covering the surface well.
Sprinkle a generous amount of everything seasoning on top of the bagels. Bake in the oven for 15-20 minutes or until the bagels are golden. Remove from the oven and let them cool completely on a wire rack. Enjoy with your favourite toppings!

Beef Bulgogi
Date first cooked: 19/1/23
Ingredients:
454g pack sirloin steaks, cut into very thin slices (I used a simple lidl beef steak pack)
1 large carrot, peeled and cut into slim batons
1 bunch spring onions, trimmed, halved lengthways & cut into lengths
Rice to serve (I used mie noodles)
For the marinade
6 tbsp dark soy sauce
1 tbsp sesame oil
1 tbsp rice wine
1 clove garlic, sliced
2.5cm piece of fresh root ginger, peeled and finely grated) I used 1 tbsp ground ginger)
2 tbsp soft brown sugar
2 tsp sesame seeds
Method:
Place all the marinade ingredients into a large bowl & mix together well until the sugar has dissolved. Add the steak & allow to marinade for 30 mins at room temperature.
Add the spring onions & carrotsan, stir well. Place a griddle pan (I used a frying pan) over a medium-high heat d allow to get really hot. Carefully spoon the meat & vegetables onto the pan (in two batches if necessary) & cook for 3-4 mins over a high heat, turning occasionally until cooked & lightly charred in places. Pour over the remaining marinade for the final min of cooking. Serve with rice (or in my case, noodles).

Okay, I think that might just be super boring, but I love white rice with sesame oil, soy sauce and grilled sesame seeds sprinkled on it, and then whatever vegetable + scrambled eggs. But really it’s the rice that I love, the sauces make it so cosy, you know?

Chili Crisp Chicken Tacos with Spicy Mango Salsa 🌮🌮
➡️ Ingredients:
For The Tacos:
1 pound ground chicken 🐔 1 tablespoon olive oil 🫒 1/4 cup butter 🧈 4 cloves garlic, minced 🧄 1 teaspoon chili flakes 🌶️ 2 tablespoons sesame seeds 🌾 1/3 cup curry paste 🍛 1/3 cup soy sauce 🍶 1/3 cup pickled ginger 🌿 12 hard shell tacos 🌮 2 cups shredded pepper jack cheese 🧀
For The Mango Salsa:
1 mango 🥭 1 jalapeño pepper 🌶️ 1/2 cup fresh cilantro 🌿 1/4 cup fresh basil 🌿 2 onion, chopped 🧅 1/4 cup lime juice 🍋
For The Avocado Crema:
1 avocado 🥑 1/4 cup cilantro 🌿 2 teaspoons honey 🍯
➡️ Directions:
1️⃣ Make the Chili Crisp: Melt the butter in a small pan over medium heat. Once melted, add the minced garlic and chili flakes. As the butter turns golden, the garlic will start to crisp up. This is the magic! Just watch it so the garlic doesn’t burn. Once it’s perfect, add the sesame seeds, remove them from the heat, and pour them into a heat-proof bowl.
2️⃣ Cook the Chicken: Now it’s time to cook the chicken. Heat olive oil in a pan and add the chicken. As it cooks, break it up into small pieces. After 5 minutes or so, when the chicken is browned, add the curry paste, tamari sauce, and 1/3 cup of water. Then reduce the heat and let it simmer until the sauce coats the chicken—about 5 minutes. Then add in the pickled ginger and a splash of its liquid and let it cook until the ginger caramelizes—about 2 minutes. Finally, add 2-3 tablespoons of chili crisp. Trust me, this is the magic.
3️⃣ Assemble the Tacos: While the chicken is simmering, preheat the oven to 425°F. Line up the taco shells on a baking sheet and bake for 5 around minutes to get them crispy. Then, divide the chicken mixture among the taco shells, top it with cheese, and bake it for 10 minutes. This melts the cheese into gooey goodness and gives the tacos a crunch.
4️⃣Make the Mango Salsa: While the tacos are getting all cheesy and crispy in the oven, make the mango salsa. It’s easy, just combine all the salsa ingredients (sweet mango, spicy pepper, fresh herbs, and tangy lime juice) in a medium bowl. This is going to be amazing on top of your tacos.
5️⃣ Make the Avocado Crema: For the final touch, make the avocado crema. Blend the avocado, cilantro, and honey in a blender or food processor until smooth. Add a pinch of salt, and it’s done. This crema adds a rich, creamy layer that balances out the spice and crunch of the tacos.
6️⃣ Serve: Now top with a spoonful of mango salsa and a dollop of avocado crema. Serve and enjoy the flavor bomb! There’s nothing like that first bite.

yeah.
i found this list. “50 signs you’re a good cook” because i like to torment myself and twist the knife into my own pain.
parentheses are my responses.
1. Can rustle up anything from scratch (yeah, i mean, growing up poor, i don’t think “save our souls” when i see “s.o.s.”)
2. Loving to eat as well as cook (so much for the 100 pound weight loss, i can’t be trusted, i guess…. … don’t get it? look up the phrase “never trust a skinny chef”)
3. Willing to experiment and try all foods and ingredients when cooking at home (heaven help the poor bastard who tried mastic powder the first time thinking it was going to smell like basil—)
4. Being happy to prepare food in front of guests (bro, just thinking about it makes me have a stroke)
5. Always being able to whip something up when there's virtually nothing in the cupboard (fried bread, bitches!)

Multiple sclerosis: High doses of omega-3 reduce symptoms in animal study

Multiple sclerosis (MS) is a chronic condition in which the immune system attacks the fatty layer that’s known as the myelin sheath surrounding nerves. This, in turn, reduces the ability of nerves to carry signals.
Some studies show that diets rich in omega-3 fatty acids are linked to lower MS rates and have beneficial anti-inflammatory and neurological health properties.
Recently, researchers investigated how omega-3 fatty acid consumption reduces inflammatory responses in mice.
They found that docosahexaenoyl ethanolamide (DHEA), a lipid compound derived from docosahexaenoic acid (DHA) found in fish oil, may reduce immune T cell responses and thus reduce MS-related inflammation.
“DHEA has been shown to have immune-regulating properties, and at certain concentrations, be able to significantly suppress the production of monocyte chemotactic protein-1 (MCP-1), a cytokine that plays a pivotal role in chronic inflammation associated with autoimmune disease, including MS. This study found that DHEA might also inhibit T-cell responses- another important precursor to MS.”
The researchers found that DHEA levels are at their highest concentration in mice when in remission from MS, indicating that DHEA may dampen inflammation linked to the condition.
From further experiments, they found that mice who were treated with DHEA had fewer inflammatory markers than controls.
The results, noted the researchers, indicate that DHEA likely reduces inflammation and, thus MS symptoms by reducing number of pathogenic T cells in the nervous system.
They further noted that treatment with DHEA did not affect the immune response of healthy mice. They wrote that this suggests DHEA influences the immune response outside of the brain in mice with MS, and not in healthy mice.
The researchers concluded that DHEA may reduce the severity of MS and thus may be added to diets to complement existing treatments for the condition.
Tahini Shown to Promote Heart Health Significantly

Tahini, a paste made of sesame seeds, is a staple in many Middle Eastern cuisines. Raw and unprocessed tahini, without any additional oils or additives, could be a superior food-medicine for preventing heart disease and the risk factors associated with it.
A study from the Archives of Iranian Medicine reveals tahini as a possible substitution for risky drugs like statins, drugs prescribed for heart health and known to come with potentially dangerous side effects.
The study looked at the effects of tahini in type 2 diabetics—people who are known to be at a greater risk of cardiac mortality due to higher than normal blood lipids, high blood sugar, and insulin resistance.
A group of 41 patients was divided into two groups. Group A was given two tablespoons (28 grams) of tahini with their breakfast every day for six months. Group B functioned as the control group and didn’t receive tahini at all. Aside from that, the number of calories in their breakfast and throughout the day were kept similar. The groups were tested at the beginning and at six weeks for various cardiovascular risk factors including: blood pressure, triglycerides, and total cholesterol levels. After only six weeks, significant changes were noted:
“After six weeks, there were significant decreases in serum TG (15.3 mg/dL) and AIP (39 %) in group A. Moreover, slight decreases in serum TC, LDL-C, and other atherogenic lipid parameters and a mild increase in HDL-C also were observed during Ardeh supplementation. Anthropometric measures and blood pressure were unchanged during the study period in both groups.”
A 39% decrease in atherogenic index of plasma is significant, particularly since the only thing that changed in group A was the addition of tahini. The tahini used was “raw” or not combined with any oil or added ingredients—it was pure, ground sesame seeds.
This is far from the first study to implicate sesame seeds in positive health changes. Sesame seeds are comparable to NSAIDs (like ibuprofen) in the treatment of knee arthritis—able to reduce pain significantly without any side effects.
Excessive screen time linked to suicidal behaviors in US preteens

Amidst the worsening teen mental health crisis and new legislation proposing to ban children under 16 from using social media, a new study finds that greater screen time among children 9-11 is associated with a higher risk of developing suicidal behaviors two years later.
The study, published in Preventive Medicine, finds that each additional hour of screen timeis associated with a 9% higher risk of reporting suicidal behavior two years later. In particular, each extra hour spent watching videos, playing video games, texting, and video chatting led to a higher risk of suicidal behavior.
"Screen usage could lead to social isolation, cyberbullying, and sleep disruption, which could worsen mental health," said senior author Jason Nagata, MD, assistant professor of pediatrics at the University of California, San Francisco. "More time on screens often displaces time for in person socializing, physical activity, and sleep."
Suicide is the second leading cause of death among adolescents. The study collected screen time data for 11,633 children 9-11 years who were followed for two years. The children answered questions about their time spent on six different screen time modalities as well as suicidal behaviors.
"Screen time can have important benefits such as education and socialization, but parents should try to mitigate adverse mental health risks from excessive screen time. Parents should regularly talk to their children about screen usage and role model screen behaviors," said Nagata.
