Doing some school readings and came across some fascinating gendered language. Use of pronoun “she” to describe a worker (which I spotted and thought would be consistent throughout the article) then an almost immediate use of “he” to describe an employer. I was reheating a chicken curry in the microwave at work the other day and a colleague remarked about how excellent it smelled (obvs right btw). So here’s the recipe - it’s taken a while, but I think I’ve finally got it right. Toast cumin and mustard seeds. Chop onions and fry in ghee (add some oil, or replace totally for VO) covered. Crush onions and ginger as one might crush an uprising of one’s enemies (or use jar stuff to save time). Add too much salt; pepper too (bit of a Sri Lankan influence there). Add cardamom. Grab some curry leaves from the plant in your backyard or balcony and throw those in. Add enough (fresh and/or powdered) chilli so that your eyes water but not so much that your neighbours report you to ASIO on suspicion of running a chemical weapons lab. Throw in some diced (fresh) tomatos. Defriend anyone who doesn’t like coriander. Add some paprika (powder) if you like. Cover until it emulsifies into a paste. Add chicken (if you want to make a chicken curry), add something else for a different curry (pick a robust vegetable if going that way, like beans and/or potato). The naming convention for curry is fairly self-explanatory. On meat - bones for taste, no bones for aesthetics and convenience. Once sealed (if meat), add liquid - I sometimes use stock and question whether this is occidental chefism gone mad or just simply a post-imperialist usurpation of cultural practices. Sliding door option is to go dry for a stronger taste but less juicy juicy tenderness. Cover then don’t. Do something else for a bit, like listen to Chunari Chunari 12 times in a row, or whatever you do in your spare time. Reduce the liquid until you regret the amount of chilli you added earlier, or until you don’t think you can stir frequently enough to keep it from sticking. Also, as a special reward to the people who read all the instruction before starting: just after you throw in the tomatos, add curry powder. I cheated and used this one which I found in an Indian supermarket - it’s great (better than Maharajs), however preferably I’d assemble my own. — view on Instagram https://ift.tt/2TsxA3t
