To me the Elsens are a very accurate representation of what anxiety or generally just intense emotions feel like, even if they weren't intended to represent that, at least canonically
The fact they turn into Burnt and their bodies mutate and turn hostile when they get too stressed or scared is a bit like a metaphor to feeling like you're about to "explode" because your mind/brain can't take it anymore in desperate situations.
Not to mention that the Elsens are also addicted to sugar to be able to bear reality; If the human mind, in this case an Elsen (they're not really confirmed to be human I know don't come at me), is too aware of reality, it will want to destroy itself and sometimes actually ends up doing it because of how overwhelming reality can be.
