The olive tree is an ancient plant that characterizes central and southern Italy especially Tuscany and the Florence surronding area. Known since ancient times, olive oil is the most used fat in the Mediterranean diet. Extra virgin olive oil is the only type of oil produced simply by pressing the olives, without the help of chemical solvents or any other industrial aid, as it is the case with other vegetable oils or fats. The harvest takes place between the end of October and the end of November and it is manual. The olives are pressed twice during the day in an oil mill to avoid fermentation processes and guarantee the product quality. Extra virgin olive oil remains a genuine and natural product, a juice that transfers all the substances contained in the raw material to the oil.
