Plant-Based Diets
A plant-based diet is a diet that consists mostly or entirely of produce acquired from plants, including vegetables, grains, nuts, seeds, legumes and fruits, and with few or no animal products. There are many diets that are based off of plants including veganism, vegetarianism, and pescetarianism. A better example of a plant-based diet is a flextitarian. This is a term used to describe a person participating in a diet that largely consists of plant-based products with the occasional inclusion of meats.

Plant Vs Animal- Based Diets
Plant based diets are linked to a number of health benefits, this includes reducing risk of heart disease, certain cancers, obesity, diabetes and cognitive decline. Not too long ago diseases like diabetes were thought to be a disorder of the metabolism of insulin that one may carry for life. Now research shows that with the right diet and abstaining from animal and GMO products, it can be made possible for one to rid themselves of the disorder.
Another pro reason to choose the plant-based products is to save our planet. Data has shown that factory farms require excessive amounts of water (enough to save the parts of the planet that are going without), it contributes to large amounts of methane in our atmosphere, promotes animal cruelty (animals are often caged and abused), and can often encourage animal contagions to mutate into human diseases (eg. swine flu/H1N1, influenza, etc).
And lastly, a final reason that plant based diets are more logical, is the ethicality of it. Plants that are farmed without the use of pesticides, chemicals and additives, although may be harder to maintain than the latter, is morally the right solution. By taking animals out of their natural, wild habitat and placing them into confined cages and cells, we strip them of their ability to be a wild animal. They lose basic skills such as hunting and gathering, as well as simple fight or flight instincts. By pumping them full of hormones and chemicals and we are not only creating a modified and unnatural specimen, we are also losing much of the nutritional value that we eat them for in the first place. This is not only unnatural and unhealthy, it also is destroying our planet. Therefore by choosing a plant-based diet you are not only encouraging your own healthy lifestyle, but also aiding in global regeneration.

The Culinary Future
I believe that plant-based diets are going to play a very key-role in the culinary future. As many have begun to follow the trend of maintaining a healthy lifestyle, and have become more aware of what products they put into their bodies, it becomes evident that if we, as chefs, do not follow in these steps, we risk loosing large amounts of business. With so many different people and palettes to please, it becomes hard to know what is appropriate to serve. By incorporating vegan-based meals, it allows for a wider audience to provide you with business. By ensuring your products are GMO-free and organic, and incorporating a more vast range of meals that works for a vaster range of diets, it will only encourage more people to freely enjoy your food and advertise so to others. All that the chef really needs to do, is to ensure that the foods taste as great as the quality of them.

Vegan Chia Seed Pudding
You will need: Mason Jar, 2 and 1/2 cups of Almond Milk, 1/2 Tsp of Vanilla Extract, 1 Tbsp of Agave Syrup, 6 Tbsp of Chia Seeds and fruits/nuts for garnish if you like.
1. Grab a jar and pour your milk and agave syrup into it, along with your chia seeds.
2. Seal that jar tightly and shake vigorously.
3.Place your jar in the refrigerator overnight. The longer you let the pudding sit, the thicker and creamier it will be, and the softer the chia seeds will be. Top with berries and nuts of your liking.

Reflection
When creating my pudding I found it to be super simple. These were ingredients I found lying around the pantry, which meant for me, the recipe was already a success. The production of the actual product was also very straightforward and effortless, so even though I did not acquire a new skill, because it was so simple and fast, theres a very good chance I will be making it again.
