I love pipe organs they're like half an orchestra in one instrument

2-4 keyboards (including bass) that you can each configure to a certain combination of pseudo instruments to simulate a group of instruments, especially with the polyphony added by the keyboard letting you press more than 1 key at the same time

The church of Saint-Étienne-du-Mont in Paris has an organ built by the master organ builder Pierre le Pescheur in 1636.  The wood casing is a masterpiece of carving done by Jean Buron in 1633.
